I have three words for you: stuffed flank steak. This dish turned out amazing and our guests really enjoyed it as well! For this particular recipe, I doubled it because there were four people eating. The recipe I used was from http://ellysaysopa.com/2008/03/01/flank-steak-giada-would-probably-make/ with a few personal tweaks to it.
The recipe is as follows:
1 lb flank steak
2 oz. feta cheese
1/4 cup sundried tomatoes, drained and chopped
3 Tbsp. fresh basil, chopped
salt and pepper
First, I had Ferron butterfly the steaks
while I mixed the rest of the ingredients (cheese, tomatoes, basil, and pepper).
I then pounded the steaks to flatten them out and sprinkled salt and pepper on each side. Once everything was ready, I spread an even amount of the mixture onto the steaks. Then, rolled them up and tied with kitchen twine. Then, grill to desired doneness.
Sides:
Grilled Zucchini: brushed with egg and sprinkled with Mrs. Dash
Grilled Asparagus: coated with olive oil and minced garlic
Dinner Roll: Winco
Roasted Red Potatoes:
2-3 lbs of red potatoes
salt & pepper
oregano
onion powder
garlic salt
olive oil
grated Parmesan cheese
Heat oven to 400 degrees. Foil a rimmed baking sheet and spray with PAM. Wash and cut potatoes into squares. Mix all ingredients in large bowl. Sprinkle with cheese. Spread onto baking sheet. Bake for 45 minutes-hour.
For everything we had, it really didn’t take much time and everything tasted very good!
