Homemade Chipotle? I think yes. March 9, 2011

A while back I was looking through another blog and came across a recipe for a Chipotle Chicken Bowl. Ferron and I LOVE Chipotle so we wanted to try this ASAP! :) We recently had it again, and thought I would add it here! As usual, I tweaked it Kawamura Style (with Ferron’s input of course).

Chipotle Burrito Bowl

1 cup Rice (we use Jasmine rice)

Frozen corn (however much you want)

1 Tbs. butter


juice of 1/2 lime (we usually guesstimate)

3 Tbs fresh chopped cilantro

*Add Rice corn, and lime juice. Cook rice according to directions or in a rice cooker. Add remaining ingredients.


The Beans

1 can Black Beans

chili powder


cayenne pepper

splash of chicken broth

*Drain beans. Add chicken broth. Heat beans int he microwave. Once heated, add spices to your desire.


The Chicken

2 chicken breasts

chili powder

garlic salt

onion powder


olive oil

*Marinade chicken breasts in olive oil and desired amount of spices. You can grill or pan fry the chicken. Chopped cooked chicken into strips.

This is my favorite part!

Pico De Gallo

1 tomato

1 jalapeano

1 garlic clove

1/4 cup red onionn

chopped cilantro (we like a lot of cilantro, so we use about a half a bushel)

salt & pepper

juice of 1/2 lime

*Mix all ingredients and set in the fridge until ready to use

Now it’s time to assemble your din*din! Place the rice on the bottom layer, add the beans, chicken, and finally the pico. This recipe is very flexible and you can pretty much add whatever you want to it.

I hope you all enjoy this very delicious, very filling dinner. It also makes great leftovers.
